Dr. Ruby Lathon is a certified holistic nutrition coach and advocate for plant-based nutrition. Dr. Ruby inspires with a powerful story of recovering from thyroid cancer through alternative treatment focused on a whole foods, plant-based diet. Dr. Ruby worked as a researcher and an award winning engineer, and now teaches others how to re-engineer their health and live disease free.
Dr. Lathon, a graduate of Oakwood University and the University of Alabama, served as Nutrition Policy Manager at the Physicians Committee for Responsible Medicine. Dr. Lathon is host of The Veggie Chest, a plant-based cooking show. Through her organization, Roadmap to Holistic Health, Dr. Lathon hosts a number of health conferences, workshops and vegan cooking classes and provides customized nutritional consultations.
"I’ve always had a firm belief that the body can heal itself and in January 2007 I was given the opportunity to put that belief to the test. When I received the shocking news that I had thyroid cancer, I resolved to find an alternative to surgery and began a quest to heal my body naturally. I discovered how to use food as medicine and embarked on a spiritual journey of self awareness, inner healing, and a deepened faith in God.
Fourteen months later, the once cancerous tumor was benign and months after that, the tumor completely dissolved! I am living proof that the body can heal itself when given what it needs.
